Single boiler (SBDU)
One boiler does both jobs, but not at the same time. It brews at ~93C, then you flip a switch, it climbs to steam temperature, and you steam. Machines like the Gaggia Classic Pro and Rancilio Silvia work this way. The upside is simplicity, low cost, and a small footprint. The downside is the wait between brewing and steaming, and the reverse purge to get back down to brew temp. Heat exchanger (HX)
An HX machine has one boiler kept at steam temperature, with a tube (the heat exchanger) running cold water through it to draw off brew-temperature water on demand. That means you can brew and steam at the same time, which is the big win. The catch is the famous ‘cooling flush’: because the HX water can overheat while the machine sits idle, you run a short flush before pulling to bring brew temp down to the right zone. HX machines like many Profitec and ECM models hit a sweet spot of espresso-and-milk capability without the full cost of dual boilers, and they’re brilliant for someone making back-to-back cappuccinos.
Dual boiler (DB)
Two separate boilers, one held at brew temperature and one at steam temperature, each often PID controlled. You get precise, stable brew temperature and full steam power simultaneously, no flushing dance, no waiting. Machines like the Profitec Pro 700, Lelit Bianca, and ECM Synchronika live here. This is the endgame for temperature stability and workflow, and if you make several milk drinks or you host, it’s genuinely luxurious. The cost is money, size, warm-up time, and more to maintain.
So which do you need
If you drink mostly straight espresso and one milk drink, a single boiler or a good PID single boiler is plenty. If you make milk drinks constantly or for a household, an HX or dual boiler removes all the waiting and that convenience is real. If you want set-and-forget temperature precision and don’t mind paying for it, dual boiler is the answer.
Don’t skip the grinder for the boiler
Here’s the trap: people stretch their budget to a dual boiler and pair it with a mediocre grinder. A single boiler plus a great grinder beats a dual boiler plus a weak grinder every single time. Buy the boiler architecture that matches your milk habits, but never starve the grinder to afford it. The boiler affects convenience and stability. The grinder affects whether the coffee tastes good at all.
Warm-up and daily reality
One thing spec sheets undersell is warm-up time. A ThermoJet Bambino is ready in seconds. A single boiler Gaggia or Silvia wants 15-20 minutes to fully heat the group and portafilter for stable shots. HX and dual boiler machines with big brass boilers often want 25-40 minutes to be truly thermally stable, which is why a lot of prosumer owners run them on a smart plug that fires up before they wake. If you’re an impatient morning person, factor that in. A slow-to-heat dual boiler that’s brilliant once warm is still a machine you have to plan around.
PID changes the calculus
The old rule that dual boilers own temperature stability is softening, because a PID-controlled single boiler holds brew temperature remarkably well now. A PID Gaggia or a Lelit single boiler gives you rock-solid brew temperature for straight espresso, and the only thing you give up versus a dual boiler is simultaneous steaming. So if you drink mostly espresso and one milk drink, a modern PID single boiler is a genuinely serious machine, not a compromise. Reserve the HX or dual boiler spend for when milk volume, not temperature obsession, is the real driver. Buy for how you actually drink, not for the spec that sounds most impressive on paper.
