Still early on the learning curve and light roasts are destroying me. They pull sour, want a super fine grind, and punish every tiny puck prep mistake. I’d like a medium or medium-dark that’s more forgiving while I get my technique down, something chocolatey and sweet that plays nice with milk in a flat white. Not looking for the trendiest funky natural, just a genuinely tasty, reliable bean I can practice on without wanting to throw the portafilter. What roasters ship fast with a printed roast date? Bonus if it’s good espresso straight and in milk. What have you been reaching for lately when you just want a shot that behaves?
